When Ministry of Crab opened a decade ago, Sri Lanka had just come out of a thirty year war and Sri Lanka’s tourism slogan reflecting this was ‘Sri Lanka’s small miracle’. When creating a signature cocktail, chef Dharshan drew inspiration from this, and the country being a small island to pun on the concept of the ‘long island iced tea’. The base of this drink is a iced tea soda, Ministry of Crab’s substitute for Coca Cola with which we combine Arrack and muddled lime to create this refreshing cocktail ‘Small Island Iced Tea’.
